ALOO GOBI with AJWAIN and SHIMLA MIRCH
Aloo Gobi is cooked in several variations. In this variation of dry Aloo Gobi, we use Ajwain seeds and Capsicum. The aroma from Ajwain and the crunch from Shimla Mirch makes this variation of Aloo Gobi unique in taste and aroma. You can enjoy Aloo Gobi with Ajwain and Shimla Mirch as a side dish alongside Roti, Chapati, Puri, Naan, Rice etc.
Step by step recipe of Aloo Gobi with Ajwain and Shimla Mirch.
- Heat Oil to medium for deep fry
- Add 2 cups of diced Potato (in batches as needed)
- Deep fry till Potato turns golden brown
- Transfer fried Potato to a Bowl
- heat Oil to high for deep fry
- add 2 cups of Cauliflower florets (in batches as needed)
- deep fry till Cauliflower turns golden brown
- transfer deep fried Cauliflower to a Bowl
- heat Oil to medium for deep fry
- add half cup split Cashews
- deep fry till Cashews turn golden brown
- transfer deep fried Cashews to a Bowl
- add 1-2 spoons Oil to a Pan or Wok
- Heat Oil to medium
- add 1-2 spoons Ajwain seeds
- add 1 spoon chopped Ginger
- stir and fry till Ginger raw smell goes away
- add 1 cup Tomato diced or sliced
- stir and fry for 1 minute or so
- add Salt to taste
- add half spoon Turmeric
- add half spoon red Chilli powder
- stir and fry for 1 minute or so
- cover and cook, stirring occasionally till Tomato turns soft and mushy
- add 2 cups fried Potato
- add 2 cups fried Cauliflower
- add half cup fried Cashews
- give it a gentle mix try not to mash Potato or Cauliflower
- add 2-4 green Chillies
- add 10-12 curry Leaves
- add 2 cups Capsicum of various colours
- give it a gentle mix try not to mash Potato or Cauliflower
- cover and cook for 3-4 minutes
- add 1-2 spoons Coriander powder
- add 1-2 spoons Coriander leaves
- give it a gentle mix try not to mash Potato or Cauliflower
- turn off heat
- cover and rest for about 10 minutes
